Coffee… I literally live for it. Every. Single. DAY! So if you’re like me and need a daily coffee fill and you love to treat yourself to yummy, quality brews… this one is for you. And honestly, even if you aren’t into coffee, but love other tastebud pleasing drinks and treats, read on! Spot On Coffee is our community’s first-ever coffee trailer! The sweet owner, Nicole, drives her trailer to location, every day, and whips up kindness and coffees for her customers. She recently moved to a new location, where I am sure many of you loyal locals have seen her new coffee house (coming soon!), but is currently still in her sweet, OG, trailer. So grab your coffee and let’s dive in.

Nicole says the dream of Spot On “brewed” (see what she did there?) in her head and heart for about 2 years before she acted upon it. In early 2018 she was offered a position as a manager of a coffee shop; however, with no knowledge on managing others or large-mass coffee brewing, Nicole turned down the offer. A year later, when taking their foster daughter to college in Austin TX, Nicole saw all of the food trucks that ATX has to offer and told her husband (Mr. Spot On) that a coffee TRAILER was the way to start this dream. They found a deal on a trailer that they couldn’t pass up, and within 5 months the trailer was built out. On March 13, 2020 Spot On Coffee was open for business!

Spot On opened for business in the parking lot fo the Oak Hills Community Church. Nicole cannot thank them enough for allowing her to chase her dreams there, without hesitation, and being such large supporters of hers. Throughout the 2 years that Spot On has been open, there have been numerous friendships created through that coffee trailer window. Nicole has been able to share in so many peoples day to day ups and downs, celebrations, and challenges. The people that she has met along the way has been her favorite moments so far. She loves her customers and being a part of their lives! The amount of times I’ve said “there’s no one behind me, right?”, as I continue to ramble on after I’ve already been handed my tried and true “Zoe” Latte is too large to count. Being served coffee with a side of kindness, by someone who truly cares, is such a tiny luxury that Nicole is offering up to the people that visit Spot On.

Being her own boss and being there for her family was a major factor in starting Spot On. Nicole wants to be a present mom and is working towards that. She hopes to one day be able to enjoy both the coffee shop and personal freedoms with her family, but right now, it’s mainly coffee consuming her life. The hard part of being a business owner and a mom, is balancing that time. There are long nights, early mornings, missed times, and difficult decisions, but the drive to create something amazing for your family and community, pushes you through. Aside from family, Nicole LOVES our community! She has served at weddings, been to local boutiques, participates in market days, and so much more. Getting to know her customers and be a part of those special moments, or even just a daily source of joy with a nice cup of coffee, is something that fuels the dream she is chasing. She says she also loves spoiling her customers with quality coffee! I mean, the heart on this girl is unmatched y’all!

With the “Micro” Spot On coming soon, Nicole will be able to offer a small amount of indoor seating, as well as a joint seating area outside with Love is Sweets (blog on that partnership coming soon!). In the future, the plans to grow Spot On include having more indoor seating, allowing a place for meetings, a hangout with a friend, a place to go work, or just chill and read a book. Nicole is always exploring other shops and their vibes. Although she said her dreams of Spot On have now grown past her expectations, she’s now continuing to scale those dreams and follow them to the next phase of this business.

A little fun fact: all of their signature drinks are named after past and present spotted pets. For example, Diamond was Nicole’s childhood Appaloosa horse that her dad raised from a baby. Delilah is a Nubian goat living her best retirement life with a sweet Spot On family, and Pebbles is a Dalmatian dog. Nicole looks forward to illustrating (and honoring) them with portraits in the new building! Another one of my personal favorites is The Sue. I typically go back and forth between that and Zoe. If you’re not into coffee or even want tp pair it with a treat, Spot On has options for you! From fun chocolate milks for kids, to flavored lemonades and other beverages, there is a multitude of options for you to try. And don’t forget to add on a treat! Nicole sources her yummy goods from local bakers. Local supporting local, that’s some good business right there!
